Ordered on Monday received on Wednesday , We cut the roast in half , about 8lbs each froze one and cooked the other . We set temp at 500 degrees cooked at 5 min. per lb ( 40 min ) turned oven off . We used a wired digital thermostat (all ovens are different with holding the heat ) so about two hours later we hit 130 degrees , then removed roast let sit for 15 minutes . Cooked perfect for us medium rare , As for the roast quality "Unbelievable" Beast we ever had so tender , juicy , tasty , WOW the BEST
