Hi. This was my first order from Creekstone and it was terrible. At first glance the 15 lb brisket looked ok. It had a nice fat cap and looked good. When I began to prep it, I halved it in order to make 2 briskets, one in the oven, the other in the slow cooker. Inside about one inch below the fat cap and extending out both horizontally and vertically, was another massive fat cap, about 3 inches thick which had me trimming and cutting away almost a quarter of the entire product. I fully understand that brisket by its nature contains alot of fat and muscle, but this was horrible. After I removed it all, I was able to make both pieces come out good, but they need to qc the cuts better if they are selling $160 briskets.
