I sliced them as soon as I got them and put most in the freezer, so I can eat it over the course of the next few weeks. After freezing, they still taste incredible. Never thought I would characterize steak as "rich and creamy" but this is. It is a lot of meat, so be ready to prep it.
Ordered on Monday received on Wednesday , We cut the roast in half , about 8lbs each froze one and cooked the other . We set temp at 500 degrees cooked at 5 min. per lb ( 40 min ) turned oven off . We used a wired digital thermostat (all ovens are different with holding the heat ) so about two hours later we hit 130 degrees , then removed roast let sit for 15 minutes . Cooked perfect for us medium rare , As for the roast quality "Unbelievable" Beast we ever had so tender , juicy , tasty , WOW the BEST

Beautifully tender and juicy roast. After minor trimming of exterior hard fat, I butchered this roast into 6 - 20 oz 1.5 inch steaks and a 5lb Prime Rib roast for Christmas. Based on the pull apart texture of the steak sous vide at 135 for 2hrs using salt, pepper, garlic, and some thyme. Then sear to perfect crust. This is high quality, easy delivery, and great value! Now to dry age one of these!
