Caribbean Curry Beef Turnovers with Minted Yogurt Sauce
Savory beef filling tucked into a curry kissed round of pastry is perfect for a group on the go. These little pockets of goodness are great to make ahead and keep on hand.
Ingredients
For the Pastry (makes 10)
- 2 cups all-purpose flour
- ½ tsp curry powder
- ¼ tsp salt
- ½ cup cold butter, diced
- 1/3 cup cold water
Filling
- 2 Tb olive oil
- 1 small yellow onion, minced
- ½ to one habanero pepper, seeded and minced (use gloves, these are very hot!)
- 1 pound Creekstone Farms ground beef
- 1 tsp curry powder
- 1 tsp dried thyme
- 1 tsp allspice
- 1 tsp salt
- 1/2 cup breadcrumbs
- 1/2 cup beef broth or water
- 1 cup frozen peas
- 1 egg, beaten, to seal pastries and glaze
Minted Yogurt Sauce (makes one cup)
- 1 cup Greek Yogurt
- Juice of one lemon
- 2 Tb fresh mint, minced ( can substitute basil or cilantro if desired)
- ½ tsp salt
Instructions
For Pastry
Mix the flour, curry powder, and salt in the bowl of a food processor. Pulse to combine. Add the butter and pulse a few times, then turn on high until the mixture resembles coarse crumbs. Scrape down edges of the bowl. Put lid back on and turn on, slowly adding water until the mixture forms a ball. If the mixture does not come together, add a bit more water. Remove from processor and knead lightly on a floured surface. Divide into 10 equal balls, cover, and refrigerate until ready to use.
For Filling
Heat oil to medium heat in a sauté pan. Add onion and cook until transparent. Add beef, pepper, and all spices. Cook beef until no pink remains, breaking up lumps. Add salt, breadcrumbs, and beef broth and cook for a few more minutes. Fold in peas. Remove from heat and set aside to cool.
To assemble
Preheat oven to 350. On a floured board, roll out each ball of dough into a thin, even circle about 6 inches in diameter. Place an equal amount of filling on one half of each circle. Brush edges with egg and fold over to enclose filling. Press edges with a fork to seal. Place pastries on a greased baking sheet and brush lightly with egg. Bake for 30 minutes, or until golden brown.
For Yogurt Sauce
Mix all ingredients together until smooth. Serve as a dip or sauce for the turnovers.
