Delicious! Tender, flavorful, not too much fat. Some racks were 3-bone, some were 4-bone. There was a significant difference between the weight in some racks, although none were too skimpy! I had to trim the sinew, a little hard fat and the silver skin; but, not bad overall. I love smoking brisket; however, that's too much food for a smaller group and this is a great option. This was my first order with Creekstone Farms. Ordering was easy and shipment was fast. I will buy from them again, but, not until there's a $ale!
