USDA Prime Brisket

I used to buy " prime briskets" from other stores. I always had a hard time cooking them. I tried Creekstone and it transformed my cooks. I don't buy brisket from anyone else. Very little trim and great taste.

I've been smoking meats for years now and found Creekstone several years ago and thought I'd give them a shot. I've been watching videos feature Chef Tom from All Things Barbeque and have seen him reference Creekstone Farms products several times. When my local supplier didn't have prime brisket available, I went to the website to check them out and found exactly what I wanted. They happen to be running a special on the brisket and my order qualified for free shipping which made it even more attractive. The brisket arrived well boxed and in great condition. It looked wonderful and the trimming was minimal. I seasoned it the day before with salt, pepper and garlic and left it in the refrigerator overnight. I decided not to inject this one as I wanted to see how it would turn out without adding any extra moisture or flavor. I put it on my smoker, wrapped it once it reached 165 degrees and took it off at 205 degrees. After letting it rest for two hours I sliced it and was impressed. The brisket had plenty of moisture and the flavor of the meat was exceptional. My wife said this set the a new standard for her so going forward I will be ordering my briskets from Creekstone Farms.

I ordered the large 1. It was a long cook but it was worth it. Everyone liked it and I made the leftover into chili and it was great. I used to buy the "prime" at Sam's Costco etc. Don't waste your money or time. I don't buy brisket anywhere else but here
