These ribs came highly recommended and orders four slabs for a trial run of a 4th of July event. Also thought it would be nice not having to cut them down to St. Louis at home. But Wow!, I've never seen so many bone fragments on any cut of meat! One slab actually started with a small rib and ended with a small rib..? Guess they just cut the larger ones in half.. strangest thing I've ever seen done to ribs. All of the ribs were sharp on both ends. Parts of the membrane were present and some parts were still there, which ended up taking more time to pick all the pieces off... would have been much easier to just do it myself. I will say that they did taste great.. really great. Just not worth all the time to clean things up. For the 4th of July I will look elsewhere.
