So good I couldn't take pictures because my guests were grabbing it as I sliced. Finished a few hours quicker than others I've done at 225-250... didn't even wrap it during the stall. Wrapped in butcher paper at 203 and rested for two hours wrapped in a towel. Crazy moist and perfect. Will do it again.
The brisket as always came out excellent.

225 until 170 and then wrapped it in Butcher. paper.cook 3 hours at 300 in a offset Smoker.love it Great product.

Pricey but worth it for a special occasion.
Smoked it on a Weber Smokefire at 275 deg F. 5 hrs in smoke 2.5 hrs wrapped. Internal temp 207. Pulled based on feel and rested 2 hrs
