I have prepared and smoked brisket from several places including super markets, online, even from the Mennonite butchers. I really prefer the quality of Creekstone's beef. Honestly I've only bought the brisket from them, but if the rest is just as good it wouldn't surprise me. It really does matter what that cow eats and how it's raised when it comes to the end product.
I bought two briskets, one of the briskets was perfect. The other one was nothing but fat. I was amazed at how thick the fat was on this. I never thought the trimming would never end. It was a good 4 to 5 pounds of fat compared to the other one which maybe I cut 1 to 2 off. I was so disappointed, I was super excited about my cook and this put a damper on it. I ended up just going to heb right before closing and was able to get another brisket so I ended up having enough for what I was cooking it for. I just ended up using the one and cutting it all in to burnt ends so l since it was such an uneven brisket. I've cooked 100s of briskets I've never had one like this one was. It was pure bad luck and I don't feel like there's anything creekstone did wrong. The brisket looked perfect until I started trimming the fat and it was just never ending
This brisket was about the 5th or 6th creek stone brisket for me. All have been amazing. The brisket come very nicely pre trimmed so little trimming is required. The flats are always thick and even. Excellent quality and marbling. Highly recommended.
We absolutely love ordering our beef from Creekstone Farms. They have the best Prime Beef Brisket and it always comes out so tender every time. We will continue to order our meat from you when we are firing up the smoker.
I injected the brisket with brine and let it sit overnight, but it was still quite dry. It had very little marbling, even in the point. It was flavorful, but overall disappointing.
