Smoked Bone-In Short Rib

Ingredients

  • 5lbs Bone-In Short Rib

  • 2 Cups BBQ Chile Rub

  • 1 Quart Mole

  • 1 Pint Blackberries

  • 2 Quarts Chicken Stock

  • 12 Each Cipollini Onions

  • 1 Each Spaghetti Squash

  • Salt (to Taste)

  • Pepper (to Taste)

  • Canola Oil (to Taste)

  • Sesame Seeds

Directions

  1. Mix your favorite BBQ Rub (1.5cups) with ¼ cup red chili powder & ¼ cup cumin

  2. Trim Short ribs into individual portions and generously rub down with rub

  3. Put short ribs on smoker and smoke around 4-6 hours @225 degrees until done

  4. Mix mole (store bought or from scratch) with hot chicken stock until desired consistency

  5. Blend full pint of blackberries into sauce and set aside 

  6. In baking pan, completely cover onions w/oil and bake in oven(325) for 30min, pull out and drain oil

  7. Cut squash in half, rub with oil and bake face down on baking sheet for 30 min or until fork tender - pull out, scrape out flesh w/fork and season 

  8. Finished squash on plate - set short rib on squash - place onions around short rib and sauce - garnish with toasted sesame seeds.
