USDA Prime Whole Brisket (Competition Brisket)

For a competition brisket at a competition price, I was expecting a beautiful brisket. When I unwrapped the brisket the flat was about as think as you can imagine. Not much thicker than a pencil and required a lot of trimming and wasted meat to get a good shape. Because of the 100% Satisfaction Guarantee I sent a note to customer service with my concerns and included a picture. We went back and forth a bit but there was not attempt to fix the situation. The brisket was good and I'm willing to try again, but I thought I would share my experience both with the brisket and with the "Satisfaction Guarantee."

First, I'll say that this is the first subpar product I've had from Creekstone. I’ve been smoking briskets for years (Choice, Prime, Wagyu) so I had high expectations for this “Competition” Prime brisket. Honestly, this one missed the mark.

The point was more than twice the thickness of the flat, which makes it almost impossible to cook evenly. Normally, I might trim the point down, but this cut wasn’t particularly fatty and I was cooking for a big group, so I couldn’t afford to lose that meat. That left me stuck: either the flat came out dry, or the point stayed underdone, or I trim off a fair amount of meat. Not what you want from a brisket at this level and price.

The marbling was also very weak for a Prime brisket, and the trimming was odd and inconsistent. The product page promises a uniform 1” fat cap and no lean showing, but that’s not what I got at all.

For the price and the “competition” label, I was expecting a well-balanced brisket with strong marbling and decent trimming. Instead, it felt more like a standard packer I could've gotten at Costco.

It’s a prime brisket.

I ordered the USDA Prime Whole Brisket (Competition Brisket) from Creekstone Farms and used a gift card I had recieved when buying my Yoder YS640 from All Things BBQ. This was my first time ordering and the brisket arrived packed with ice packs and in a thermal zip closure cooler bag. I had no issues and the product arrive as described. The meat looked fantastic! I trimmed the fat cap down and seasoned it up with Cattleman's Lone Star Brisket seasoning and smoked it on my Yoder with Oak pellets. The brisket came out amazing! The meat was tender and juicy, it had a great bark and was very flavorful! It was a fantastic experience and I will definetly order again in the future. I think next time I might get some of the Duroc Pork to try.
